Changing the quality of food and service is difficult in IR eventhough privatised and run under supervision by IRCTC. This is because of a sort of Monopoly of the authorized vendor and alternate system or vendor is not available. One more thing is food is tastier when is served hot and it cannot be fully implemented in trains and with dry kitchens and base stations. One example is when u open Swiggy or any food tech app u find n number of options serving to n number of tastes to b number of people and it's the quality and service switch makes the foodie comeback but everyday u find a new customer in train who has bo other option. The prices also decide the quality.
