My friend I always get cheated while ordering food in North India. All they have is aloo with this and that(90% aloo). Regarding dosas and idlies am surprised you don't like the original in south but fake ones with sour coconut chutney and sambhar without dal just tamarind paste. We never use bottle gourd(Giya or lauki) in sambhar. But in north it is used as it is cheap. No ones fools you while buying vada at DMM. He tells you masala vada and we southies know exactly what is is. Same with samosas you get in south. Anyways samosas not really Indian original. Iranians and turks make it with minced meat. Samosas are just deep fried stuff which has an equivalent in every continent.
