Proper modern appliances IRCTC kitchens under tough management can be made at major stations. With this we can have some space in alternate coaches or some coaches for oven like device and refrigeration which will keep that kitchen food fresh. I think its called warmer. So that food can be served at correct time. Mega kitchen stations should be chosen in such manner that maximum of the trains will be served by that kitchen. For extra more income, those kitchens can serve food for some top govt offices too if it becomes possible in their schedule.

more... We must analyse the journeys of maximum trains which require catering service like: Consider CR Howrah-Nagpur-Bhusaval-Mumbai/pune bound maximum trains leave Howrah at evening or night. So dinner can be served from HWH station or KGP station. KGP can serve to ECoR train too in this case. Then maximum of those trains reach in morning period at BSP-R-DURG section. So breakfast/Lunch can be served in that section kitchen. Then those trains enter BD-AK-BSL section in evening or night. So dinner can be again served at right time in that section. Likewise we can arrange this system and can serve maximum of trains in better way.
Most of these kitchens will serve multiple line trains like Kharagpur, Vijayawada, Nagpur, Howrah, Bhusaval, Mughal Sarai, Kanpur, Guntakal, Madgaon, Chennai, etc. This will develop IRCTC as a corporate too. System must be highly managed. Will thus increase IR standards accordingly. Earnings will be increasing with time with some internal measure also. Passengers will not hesitate for money as it will be quality food.
